Here’s a wonderful, protein-rich raw rice dish, suitable as a main or side dish.
Ingredients
2 cups wild rice
1/2 cup chopped walnuts
1/4 cup hemp seeds
2 tablespoons sesame seeds
1/4 cup chopped red onion
1/4 cup mung bean sprouts
1/4 cup olive oil
3 minced garlic cloves
2 tablespoons nutritional yeast
1 teaspoon Himalayan salt
Soak wild rice in glass dry in dehydrator at 115 degrees for 24 hours (or for 2-3 days at room temperature). Drain and rinse rice every 8 hours or so.
When rice is fluffy and “blooming,” drain and rinse and combine in a large mixing bowl the rice with all of the rest of the ingredients. If more “bite” is desired, add more garlic and onion.
